I’m going to Las Vegas, what should I do?

I’m going to Las Vegas with my wife next week for a 4 day vacation.  We don’t really have anything planned yet.  For those of you who have been there, what should we do?  We aren’t really into gambling so we’ll probably only do that for 1 night.  I’d also like to check out the Hoover Dam.  Anything else we shouldn’t miss?

At long last, I finally hit the 20 pound mark

It feels like I’ve been sitting at a 18-19 pound loss forever.  But finally, I crossed the 20 pound mark today when I weighed in at 192.6.  You can see from the graph below that my weight loss has slowed down even though I am not doing anything differently.  From what I understand, this is normal and a sign that I am getting healthier, because my body has adjusted to the lower caloric intake.  I’m averaging 2.2 pounds lost per week, so I guess I shouldn’t complain.

My next short-term goal is 185 pounds, which would bring my BMI from the “obese” range to the “overweight” range. My long term goal is 154 pounds, which would bring my BMI into the normal range.  I am still unsure if this is even possible, because I didn’t even weigh 155 after a summer of drum corps!

Homemade Blueberry Oatmeal with Maple Syrup

Over the last few months as I’ve been watching my calories, I’ve started to learn to look for foods that are low in calories and high in “density” (my word for it).  These foods make you feel full for a long time.  No one likes hunger pangs 2 hours before mealtime, so by eating these “dense” foods you feel fine for 3-4 hours.  One thing I’ve noticed about these types of foods is that they tend to be high in fiber and low in carbohydrates.

Anyway, I made this for the first time tonight and it was awesome.  It’s a great breakfast meal, but I like to eat oatmeal around 9pm after I put my daughter to sleep.  It helps me relax and I don’t go to bed hungry and craving a Big Mac.

Ingredients

  • 1/2 cup Old Fashioned Oats (the cheap kind you find at any grocery store, NOT instant)
  • 1/2 cup 2% Milk*
  • 1/2 cup Water
  • 1/2 tsp Cinnamon
  • 1/4 tsp Pure Vanilla Extract
  • 1 tbsp Maple Syrup
  • 1/2 cup Fresh Blueberries (you could use frozen too)

*you could replace the milk with water to reduce the calories even more, but it won’t taste as “creamy”

Directions

Combine the oats, milk, water, cinnamon, and vanilla extract in a small pot.  Turn the heat to medium, and cook for 5 minutes, stirring occasionally.  It will start to get thicker as the oats absorb the liquid.  After the 5 minutes is up, add the blueberries and maple syrup.  Reduce the heat to low and cook for 5 more minutes, stirring occasionally.  While you are stirring, try to pop the blueberries so they ooze their goodness into the oatmeal.  I use this cool tool I got from Pampered Chef (thanks Mel!) which makes it really easy to pound away at the berries.  After the 5 minutes are up, you are done!

Nutrition

This recipe makes 1 really big serving or 2 average size servings.  The big serving is 316 calories and the average servings are 158 calories each.  If you eat the big serving for breakfast at 8am, you won’t be hungry for lunch until 1-2pm.  It’s high in fiber and protein, while being low in fat, sodium, and carbs.  Also, I’ve heard that blueberries are good for you too.

Deciding To Lose Weight

I’ve tried various methods throughout my life in an attempt to lose weight. Most of them worked and would have continued to work had I stuck with them. There’s just one problem… I love food. Good food. Not fast food (although Taco Bell is pretty tasty), but good food.

About 5 years ago, I really got into cooking and starting learning everything I could about it. I started experimenting with different types of food, not just American, and learned that there’s great food in every culture. I cook using whole base ingredients and do all of my own prep work. I use a lot of produce, meat, and other natural ingredients from scratch. It takes more time to cook this way, but I enjoy it and the food tastes better.

Anyway, I love food so much that I developed a real obsession with it, always looking forward to the next meal and wondering what weird concoction that I could try. I ate at a lot of nice restaurants and loved every minute of it.

So anyway, I accept the fact that I love food and nothing’s going to change that. The problem is, I’m not really active enough to eat all this good, rich food without getting fat and unhealthy. Somethings gotta give.

I’ve been overweight (actually obese according to my BMI score) for a long time, so I’m used to hearing quips from people about being fat. To be honest, it doesn’t really bother me that much, but still, no one likes to hear things like that. The real catalyst for me to do something came while I was playing racquetball. I’ve been playing for 6 years and used to play for 2 hours straight, but after I played one twenty minute game, I was spent. I couldn’t breath. It was pitiful. At that moment, I knew I had to change.

It’s not that I don’t get any exercise. I play in a racquetball league twice a week and also walk my dogs a few days a week. But, my food intake was too much for even this amount of exercise to combat.

I had read some things about keeping a food log and how it was a very successful tool in the weight loss process. So I used my google-fu skills and found MyFoodDiary.com. For $9 a month, I use their site to track everything I eat. They have a huge database of food, so it’s really not that time consuming. To boil it down to the very basics, it’s a calorie counting system that’s easy to use.

I started using their site January 31, 2010 and I weighed 213 pounds. Now, 2 months later, I’m 193 pounds, a loss of 20 pounds. I still have a long way to go to meet my goal weight of 170 pounds, but this method works for me. I’m a nerd and numbers appeal to me, so doing the math of weight loss makes every food and exercise decision black and white.

Why am I sharing this? Partly as self-therapy to help me do it, and partly to help others who may be trying to do the same thing. I’ll be posting about my discoveries regarding food, recipes, exercise and more. I hope you get something out of it.
